3 Wed
2 boiled eggs, celery stick with almond butter, half grapefruit
Fish taco mix with lettuce
Sweet potato puff

Pantry/Fridge Check: eggs, celery, almond butter, grapefruit, tilapia fillets or canned salmon, lettuce, cilantro, cumin, chili powder, garlic powder, onion powder, coconut oil, salt and pepper, limes, sweet potatoes, cinnamon, nutmeg, olive oil (salsa ingredients not included in this list as it is optional)




Fish Tacos
1-2 lb salmon or tilapia fillets, or 4 cans salmon
1-2 TBSP coconut oil
½ bunch cilantro
1 tsp cumin
1 tsp chili powder
1 tsp salt 
1 tsp onion powder
½ tsp garlic
½ tsp pepper
Juice of 2 limes
¼ head cabbage, sliced thin (optional)
Melt oil in a skillet and add fish, breaking apart as it cooks, adding the spices and stirring together to meld flavors. Add ½ the cilantro and let it cook into fish, use the rest as topping. Add cabbage and cook about 2 minutes or until wilted. Squeeze lime into fish when it’s about done. Taste and add more seasonings as desired. Serve in lettuce leaf and top with salsa and/or avocado if desired.



Restaurant Style Salsa
3 large tomatoes
½ red onion
2 jalapeno peppers
2 Serrano peppers
2 garlic cloves
1 -2 limes, juiced
½ bunch cilantro
1 tsp salt
2 8oz cans tomato sauce
Blend all ingredients except tomato sauce in blender until pureed. Stir in tomato sauce until evenly red. 



Sweet Potato Puff
3-4 medium sweet potatoes
1 tsp baking powder
Dash of cinnamon
Dash of nutmeg
Dash of salt
3 eggs
1 TBSP olive oil
Puncture sweet potatoes with a fork then bake in a 350 degree oven for 1 hour or until fork tender. Take them out and with gloves on peel them while hot (skins should fall off). Cut them up roughly and put them in a food processor with baking powder, cinnamon, nutmeg, salt, eggs and oil (might half to do half at a time depending on size of processor). Process until as smooth as baby food. Place mixture in an greased casserole dish, bake at 350 for 30 minutes. The puff will be soufflĂ© like, watch it to make sure the edges do not get overly brown. It will collapse when you spoon into it.  You can also make this in a pie crust! (See squash pie recipe for crust)
